The Only Summer Side Dish You’ll Need

Like the majority of us around here, I LOVE summer. The days are longer, we spend more time outside, and we get the chance to break our typical “preheat the oven” mealtime rules. One of my husband’s favorite summer activities is using his smoker. He’s always itching to make us ribs, or even just burgers and hot dogs. In an attempt to bring some healthy focus back to this three-month period of sun, fun, and full-fat everything, I asked him to try grilling one of my favorite side dishes: asparagus. As a bona fide meat eater, he was a bit nervous to place my “rabbit food” next to the meat, but in the end he happily obliged.

It’s now become a staple at nearly all of our meals. This side dish is super quick and easy. But don’t fret if you don’t have a grill, it can easily be made in the oven as well!

Ingredients:

  • Asparagus with 1-2 inches removed from end
  • Olive oil
  • Kosher salt
  • Black pepper
  • Garlic powder

To make grilled asparagus:

  • Preheat grill to medium heat.
  • Coat asparagus with olive oil, salt, black pepper, and garlic powder.
  • Cook for 5-6 minutes.

To ease clean up, asparagus can be threaded onto bamboo skewers or placed in aluminum foil.

To cook in the oven:

  • Preheat oven to 425F degrees.
  • Coat asparagus with olive oil, salt, black pepper, and garlic powder.
  • Place on baking sheet.
  • Cook for 10-15 minutes.

To ease clean up, we cover the baking sheet with parchment paper.
