The month of May brings forth THE red fruit. The one we dip in chocolate. The juicy we pluck from vines and plop into our mouths as we pick. Fresh strawberry season has always been a favorite of mine since I was just a little girl. There’s something outstanding about this fruit arriving to us in the southeast just one month prior to summer’s full swing. It’s almost as if this red and delicious puts on its very own welcoming party for all things warm and water worthy.

Strawberry recipes are so popular this time of year. Just about anyway I can incorporate this jubilant specimen into my diet is nothing short of glorious. I eat them on salads, on fruit pizzas, atop yogurt, too. But the way I love them best? Hands down these ruby red darlin’s take first prize in that ever popular end-of-the-meal location: DESSERT.

I thought I’d share with you my all-time favorite strawberry recipe here. Strawberry pretzel salad evokes notions of cap lock JOY just thinking of preparing this crunchy salty sweet concoction.

Strawberry Pretzel Salad

Ingredients
2½ cups pretzels, crushed
3 tablespoons brown sugar
¾ cup butter, melted
1 six ounce box instant strawberry jello
1 16 ounce container of fresh strawberries, sliced, or one 10 ounce package frozen strawberries
1 eight ounce package cream cheese
1 cup sugar
1 eight ounce container of cool whip

Instructions

  1. Preheat oven to 350F degrees. In a mixing bowl, combine crushed pretzels, sugar, and melted butter. Press into a lightly greased 9×13 pan. Bake for 8 minutes and remove from oven. Let cool completely.
  2.  Make the jello according to package directions. Mix in the fresh strawberries. Let refrigerate for an hour or so to let it partially set.
  3. Beat the cream cheese and sugar together until creamy. Fold in the cool whip. Spread the mixture over the top of the pretzel crust completely to the edges so the jello won’t leak through.
  4. Pour the jello over the cream cheese layer and refrigerate for 2-3 hours before serving.

Trust me. This dessert is never turned down and always one of the first to be finished at a potluck picnic. My mouth is watering just thinking of making it.
