Steak Fajita Pasta {Quick & Easy Recipe}

This Steak Fajita Pasta is the perfect Taco Tuesday recipe for a busy night, and another recipe to make your life easier!


It feels like it has been forever since I have shared a recipe even though summer is flying by. How is it already the end of June?! I hope everyone is enjoying their summer so far. Only 44 days until school starts. Not that I’m counting or anything.

While I love quick and easy recipes during the school year, I also love them during the summer too.

The last thing I want is to be standing over my stove, sweating like it’s a million degrees in my kitchen…because it is.

So today I have yet another quick and easy dinner recipe to share. I like to vary the foods we eat during the week between red meat, white meat/poultry, and meatless/seafood. During the week, I try to make carb-heavy meals once or twice and keep the rest of the week lighter. We also have themed nights, which means every Tuesday, we eat some kind of Mexican food. So this steak fajita pasta recipe is perfect for Taco Tuesday!

If you want to get kids involved in the kitchen, measuring and mixing the spice mix is a great start. I like to hand my kids a 1/2 teaspoon and get their little minds working when I ask for 1 tsp. or 1 1/2 tsp.

It’s a great way for kids to practice math skills and following directions!

What you need:

  • 1 1/2 tsp. each dried oregano and ground cumin
  • 1 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. paprika
  • 1/4 tsp. red pepper flakes
  • 1/2 tsp. ground black pepper
  • 1 tsp. salt
  • 2 lb. beef stir fry meat or any other thin beef sliced thinly
  • 2 Tbsp. olive oil, divided
  • 1 medium yellow onion, sliced thinly
  • 2 bell peppers (any color), sliced thinly
  • 2 cloves minced garlic
  • 1 can (15 oz.) diced tomatoes
  • 2 1/2 cups beef stock
  • 3 cups dry penne pasta
  • 1/4 cup sour cream

Directions:

  1. In a small bowl, mix together all the spices. Then sprinkle over the meat and rub into meat.
  2. In a large, deep skillet, heat 1 Tbsp. olive oil over medium-high heat.
  3. Add steak and brown all sides, stirring as needed, about 5 minutes. Then remove from skillet and set aside.
  4. Add remaining 1 Tbsp. olive oil to skillet. Next, add onion, pepper, and garlic to the skillet.
  5. Cook, stirring often, for about 5 minutes. And remove from skillet and set aside with steak.
  6. Add tomatoes, beef broth, and pasta to skillet. And bring to a boil and cook for about 8 to 12 minutes or until pasta is al dente with some liquid remaining in skillet.
  7. Add meat and peppers back to the skillet and stir.
  8. Add sour cream and reduce heat to low. Finally cook until sour cream has heated through and is mixed in completely.
