Typically when we think of Memorial Day, the menu includes grilled burgers, potato salad, baked beans, etc. This year, I decided I wanted to switch up the menu a bit! All of these dishes are easy and the prep time is minimal. I love that you just throw the ribs in the slow cooker to cook! These dishes are great as leftovers as well. The ribs make wonderful BBQ sandwiches.
This salad is a unique combination of ingredients. It is a staple at all of my family gatherings and everyone (even the salad snubbers) love it. My Mammaw originally made this salad with the Kraft Seven Seas Italian dressing but I guess they stopped making it because no one in my family has been able to find it. If you find any, buy the store out — that stuff is amazing. There are literally entire websites dedicated to bringing this dressing back. I did find this copycat recipe but I have not tried it myself so I cannot vouch if it tastes the same or not. I enjoy substituting the iceberg lettuce for a Romain blend or spinach as well.
Ahhh! The main event. These ribs are delish. The quick grilling they get at the end really takes the flavor over the top.
I love that this dessert can be served in individual portions. I like to go ahead and make up the desserts and let them chill in the fridge until they are ready to serve. This dessert is of course a great addition to your 4th of July menu as well. The sweetness of the whipped cream mixture is perfectly balanced out by the slight tang of the strawberries and blueberries. I have also seen a version of this dessert served in a trifle bowl with the strawberries and blueberries arranged like an American flag on top.
