Easy Peasy Dinner Recipe: Chicken Pot Pie

So it’s 5pm and you don’t know what to make for dinner. That’s a dilemma around my house more often than I’d like to admit.

This Chicken Pot Pie recipe is quick, kid-friendly, cost effective and DELICIOUS. If you need something quick for dinner, this is going to be your next staple dish!

Here’s what you’ll need:

1 rotisserie chicken (I make my own in the crock pot but any store bought rotisserie chicken will do!)

1 box of refrigerated pie crust (these can be found by the canned cinnamon rolls and dough)

1 can of cream of chicken soup

1 can of cream of potato soup

1/2 cup of milk

1 can of mixed veggies (drained)

1/4 teaspoon of salt

1/4 teaspoon of pepper

1/4 teaspoon onion powder

1/2 teaspoon garlic powder

Directions:

Pick rotisserie chicken apart and dice into small chunks. Mix chicken together with canned soups, drained veggies, spices and milk.

Press one of the pie crusts into a pie dish or square glass baking dish. Pour soup/chicken/veggie mixture into the dish. Next, cover the mixture with the remaining pie crust and roll the edges together to seal the crusts. Slice a little “X” in the middle of the pie to allow for venting. Optional: Whip up an egg and brush raw egg over the top of the crust for crispy/flaky perfection.

Bake 40-60 minutes at 350F or until heated through and crust is brown.

**To make your own EASY rotisserie chicken at home, just stick a whole thawed chicken in the crock pot for 6-8 hours on low. Season with salt, pepper, garlic and onion. If you want to get really “crunchy,” save the bones and make homemade bone broth. Bone broth has MANY health benefits, including keeping the gut healthy!**
