tacotuesdaytitleMy family loves tacos. Like, we eat them at least once a week. So I was a little nervous to change it up on them, but I really wanted to try a healthier take on tacos.

I was inspired by Erica at Simple Bites Gourmet (disclaimer: I work there!) and her Taco Tuesdays; she had a dinner last week that was an awesome veggie taco. You guys know I am all about the Meatless Mondays (and if you don’t know, then please check out my Meatless Mondays recipes part 1, 2, 3, and 4.), so I decided to mesh my Meatless Mondays and Taco Tuesdays together. It. Was. Awesome.

My family totally loved every single bite, they all went back for seconds. (WINNING!) My teenager did mention that it would also qualify as a Meatless Monday meal, but not in a bad way, more in a “I love this and I am going to keep eating it, but BTW there’s no meat here” way. Also, these are things I NEVER would have thought to put in a taco. BUT THEY WORK. Like, for real, amazing deliciousness. Easy. Healthy. Win, win, winning!

So try this out; try Taco Tuesdays (or any day, because it’s healthy and delicious and amazing even on a Thursday) and let me know how it went. I guarantee your family will love this. Just serve it up and don’t say anything about it, like I did. They will be all “MOM! This is my favorite meal ever. Please make this again!” And you’ll be all “OH, good! I am so glad you like it.” (But secretly, on the inside, you will be tots high-fiving yourself. #winning)

Sweet Potato and Black Bean Tacossweetpots

  • 2 sweet potatoes, chopped
  • 1 medium onion, chopped
  • 1 can spicy black beans, rinsed
  • whole wheat tortillas
  • 1 avocado
  • 1 can fire roasted tomatoes
  • 1 jalapeño
  • 1 tomato
  • arugula, chopped
  • spinach, chopped
  • goat cheese
  • lime juice
  • salt/pepper to taste

Directions:

Place sweet potatoes and onion on a sheet pan and roast at 350F degrees for about 40 minutes, or until done. Heat black beans in sauce pan. Place fire roasted tomatoes, jalapeño, avocado (peeled), salt, pepper, and lime juice (I forgot to get a lime, so I used a few drops of lime essential oil) in a blender or food processor and blend until smooth. Put aside. Chop tomato, spinach and arugula. Heat tortillas in oven as package instructs. To assemble taco, put sweet potatoes, black beans, tomatoes, spinach, arugula, in tortilla and top with avocado/tomato sauce and goat cheese. Enjoy!
