Happy Earth Day!
Spring is well under way here in Knoxville – the dogwoods and redbuds have bloomed and the trees are beginning to sprout green leaves. It’s a really beautiful time of year. With each new season, I look forward to the foods that are in season. While things like asparagus, artichokes, and rhubarb are in season during the spring, I tend to think of lemons – and they do compliment many spring foods perfectly.
Lemon also transitions well into summer and since Knoxville has been in the high 70s (and lower 80s) lately, refreshing lemon recipes are definitely on my mind! I’ve included 30 lemon recipes below with a little of everything from breakfast to dessert.
A great way to get your kids involved with cooking and baking is to give them simple tasks to do. My older two kids love to measure things out and stir stuff. They are also particularly good at crumbling ground meat while it cooks (with supervision, of course). Lemons (and limes) are fun because after you slice them, your kids can put a little work into squeezing as much juice out of them as they can. I have a nifty little handheld lemon squeezer that my older two use when they help me with lemon recipes.
