Happy National Chili Day

Who made chili last week? I did!! Once I saw the weather was going to be cold and SNOW (but really ice), I made sure chili was on my menu for the week. But did you know that today is National Chili Day? It seems there is a day for everything now, but chili is one of my favorite foods, so I’ll be celebrating it.

Chili is just one of those foods that everyone seems to love – and love their own way. Some like lots of meat, others prefer lots of beans. Some like it over spaghetti, while others prefer a slice of cornbread as their side. But really, there is no wrong way to eat chili.

For the most part, we normally eat turkey chili or vegetarian chili. No special recipes – just browned ground turkey, beans, diced tomatoes/Rotel, and lots of spices. Sometimes I’ll add corn. Call me crazy!! But if I’m in the mood to impress, I use this guy.

Yep, good old Carroll Shelby mix. I started using this when I was a teenager fixing dinner for me and my parents. It’s just good stuff.

But knowing it was going to be cold last week (um, negative numbers in the South), I wanted to try a more substantial chili. Hearty would be the right word. One of my favorite websites, Skinnytaste, had a great chili that was hearty and healthy. Skinnytaste is really one of my favorite recipe websites and I get at least 2 meals from there every week. And, if you are watching your food intakes, all the nutritional information is listed in the recipe, including Weight Watchers points plus values. And all the recipes are loaded into My Fitness Pal (more info on MFP here).

Anyways, back to the chili. It is the One Pot Cheesy Turkey Chili Mac. And let me tell you, it was delicious!!! Turkey, beans, pasta shells, and melted cheese on top. It was a stick to your ribs kind of dinner. And it made a lot – so we were eating on that yummy goodness for days – which was great since we were all iced in at home.
