Easy Chicken Tortilla Lasagna

On these cold winter days, don’t you want to come home to a yummy smelling kitchen and have a hot, nutritious and EASY meal for your family? I know I do. So, last week I threw some stuff in the crock-pot and my house smelled amazing ALL DAY! Then, because my family doesn’t always like food that comes out of a crock-pot, I got creative and finished it in the oven. The entire meal only took about 15 minutes of prep time from me, and my family oohed-and-ahhhed and ate every bite, and then ate it the next night for left overs. I am telling you, this is a weekly dish from now on at my house. Even my picky 4-year-old ate it and loved it. She had no idea it was chock full of vegetables, either! That’s another mommy WIN!

EASY CHICKEN TORTILLA LASAGNA BeansTomatoesF

Ingredients:

  • 1 lb. boneless, skinless chicken breast
  • 1 sweet onion, chopped
  • 1 can black beans, drained
  • 1 can fire roasted diced tomatoes
  • 1 cup chopped baby spinach
  • 1 cup chopped baby kale
  • 2 tablespoons taco seasoning
  • 2 tablespoons olive oil (EVOO)
  • 2 cups shredded cheese
  • 10 soft taco shells

 

Directions:

Layer first 8 ingredients into crock-pot. Cook on low 4-6 hours, until chicken is cooked thoroughly.

Using two forks, shred chicken in crock pot. Using a prepared casserole dish (I used my stone square baker so I had lots of room), spoon enough of the sauce that was made into the crock-pot (make room around the chicken) to coat the bottom of your dish. Layer tortilla shells (I use Mission brand Carb Count because they are delicious and have 13g of fiber EACH!), then spoon chicken and veggies from your crock-pot to cover, top with cheese. Repeat layers until you are either out of room or out of chicken and veggies. I managed to fit it all into my pan, but I used a large pan. Top with tortillas and cheese.

Bake at 350F degrees for about 20 minutes or until bubbly and the cheese is melted. I topped ours with avocado and sour cream. Like I said before, this was a winner, winner, chicken dinner for my crowd!

(Yes, I used paper plates that night. Actually, I did for almost a week because we had no hot water and no heat due to an unfortunate gas leak. So, no judging!)
